Valérie Frison cultivates 6 hectares of vineyards in Ville-sur-Arce, a small village located in the Côtes des Bar, in the extreme south of the Champagne region. Here, in 2012 the Domaine Val Frison was officially born, from the ashes of the already existing Demarne-Frision. Approximately 93% of the Domaine'svineyards are planted with Pinot Noir, while the remainder are planted with Chardonnay.
The importance of respecting and preserving these beautiful terroirs and landscapes has led Valérie to organic certified viticulture since 2003: "We take care of the vines with great attention so that they can express the typicality of the terroir and the distinctive characteristics of each vintage". During the harvest, the grapes are harvested at their top ripeness, while no blend is made in the cellar, so that each cuvée faithfully reflects its vintage.
Alcoholic fermentation starts on its own thanks to indigenous yeasts and the malolactic fermentation follows in a natural way, while the refining on the yeasts takes place in barrels. In addition, there is also great attention to the quantities of sulphites, where minimum doses of SO2 are used. At the time of disgorging no dosage is added to leave the cuvée the possibilityto express itself in its total naturalness.
