Based in the village of Sermiers in the south of the Petite Montagne de Reims, Perrine Fresne is one of the few Récoltant manipulant in a village characterized mostly by cooperatives. Young Vigneronne of just over 30 years, she takes her first steps in her family Domaine, inheriting her father's passion and viticultural knowledge. The desire to experiment and give a new face to the family business pushes Perrine to undertake her own project and create her own Champagne.
By acquiring 3 of the 9 hectares owned by the family, Perrine manages the vineyard according to the principles of sustainable viticulture with the aim of obtaining the best of Sermiers in terms of quality. The vineyard is mainly cultivated with Meunier (about 50%), followed by Pinot Noir (30%) and Chardonnay (20%) and is developed mainly in Sermiers and a small part in Villers-aux-Noeuds, both Premier Cru.
Perrine also manages the activity in the cellar with the same philosophy, choosing to focus on a limited but top quality production resulting from blending of the best grapes in proportions that will change depending on the outcome of the vintage. In the cellar, the grapes are pressed separately according to the plots of origin and spontaneous fermentation with selected yeasts is favoured.
Her first Champagne, Sarmate I, result of the 2020 harvest, definitively launches Perrine Fresne Champagnes in the Champenois panorama. There are many plans for the future, including new experiments in the cellar, a rosée from the Villers-aux-Noeuds parcel and a Côteaux Champenois.
