Founded in 1952, Domaine Hervé Brisson is located in Vert-Toulon, in the Vallée du Petit Morin, and is currently managed by Hervé, who inherited the business from his grandfather. The vineyard, with an area of 3.30 hectares of which 3.05 are cultivated with Chardonnay, has an average age of over 40 years and has been managed in Organic Agriculture since 2016. The 2019 harvest was the first AB certified.
Vinification of the cuvées in oak barrels without filtration or clarification and few sulphites, with the aim of preserving the aromas of the grapes and enhancing the expression of the terroir. The use of oak barrels is an important qualitative element for the finish and organoleptic profile of Champagne Hervé Brisson, which have pleasant woody scents ranging from toasted vanilla almonds, toasted bread and cloves, depending on the aging and the degree of barrels toasting.
