Based in Cramant, Grand Cru village in the heart of the Côte des Blancs, Richard Fouquet, the family's fifth generation of winemakers, together with his wife Karine manages the Maison Guiborat. There are 8 hectares of Guiborat property cultivated mostly in Chardonnay according to the principles of "reasoned" agriculture with the aim of preserving the vineyards and producing wines that reflect the terroir in its most authentic version.
The search for excellence is the modus operandi of the Maison, which also in the cellar adopts scrupulous and resolute choices to maintain a precise and recognizable identity with its pure and elegant Chardonnays, for example by limiting or completely avoiding malolactic fermentation in order to favor the acidity of the wines or, in the case of the 2012 vintage, the sale of all the grapes harvested because they were not considered up to the high quality standards set by the company.
Today the Maison Guiborat produces around 30,000 bottles per year, while the company's underground tuff cellar hosts around 80,000. The Guiborat brand is on the rise in the Champagne scene and its Champagnes are the reflection of the Chardonnays of the Grand Crus of the Côte des Blancs, all refined revelations of an exclusive and original style.
