Vincent Brochet is an "Artisan Vigneron", heir to a history of winemakers that began in 1721 in the village of Ecueil, classified as Premier Cru in the Montagne de Reims. Currently, the property of Domaine Les Croix covers 14 parcels and is home to the 3 traditional vines distributed in 3 different villages classified as Premier Cru: Ecueil, Villers-aux-Nœuds and Sacy.
The cultivation methods are well studied to promote the balance between the soil and the vine, in the purest respect for the environment: all vineyards are worked manually, without herbicides, pesticides or chemical fertilizers. All these demanding processes are rewarded and recognised by the "Haute Valeur Environnementale" and "Viticulture Durable en Champagne" certifications. Simple, ancestral vinifications are carried out in the cellar to reveal the personality of each terroir, vine or vintage. The grapes are harvested at their high ripeness so as not to add sugar to the fermentation.
All vinification takes place in 228 litre "fût de Chêne", fermentation is spontaneously triggered by the yeasts present in the must (indigenous yeasts) and the second fermentation (malolactic) is not sought, yet controlled at cold temperatures to give the wine freshness and vivacity. The wine then rests for 9 months on its lees in barrels until bottling. The aim is to sublimate the fruit of Mother Nature. For the Brochet family "there is no exceptional wine without exceptional grapes": understanding the terroir effect on the typicality of wines is their goal.
