In the village of Damery, a few kilometers from Epernay, in the Vallée de la Marne, the Domaine Maurice Choppin is managed by Benjamin Choppin, son of Maurice and the last of 7 generations. Strengthened by the savoir-faire inherited from the family and its profound respect for the environment, Benjamin applies the principles of organic viticulture to the management of the vineyard. Certified with High Environmental Value (HVE) since 2018, the Domaine complies with the most rigorous specifications to contribute to the conservation of the terroir with a view to sustainability.
The management of the cellar and the winemaking process also follow strict practices, spontaneous fermentations with indigenous yeasts are favored and any external or mechanical intervention (no filtration or clarification) are limited to a minimum to preserve the purity and identity of the wines. In the cellar, natural materials such as wood are preferred, and the tonneaux and barriques come from the famous Tonnellerie de Champagne located in Cauroy-lès-Hermonville.
The vinification is done by single parcels, by "millesimé" and not, in order to highlight the typical characteristics of each terroir and of individual vintages. The Champagne Maurice Choppin are identity, reflection of the chalky soil typical of the Vallée de la Marne, and express power, roundness, balance and authentic personality.
