Seven years: the time that must pass before a vintage is subjected to its first tasting. However, Champagne continues to mature in the following years and decades. Although each vintage follows its own course as it matures on its yeasts, three levels of maximum expression can be identified.

Richard Geoffroy, the Chef de Cave, calls these three moments Plenitude. Each vintage of Champagne Dom Pérignon experiences the same stages at different times. It is from the second plenitude, after at least 15 years of maturation on its yeasts, and the third plenitude, after more than 30 years, that the wine enters the Œnothèque. As a fascinating journey into the legacy of Dom Pérignon, Œnothèque offers an overview of the diversity and complexity of these wines and the mystery of their creation. 

The 1996 harvest was full of contrasts and the summer was variable, with longer rainy periods but unable to offset the previous scarcity of rainfall. In the month preceding the harvest (16th September) the heat and the north-east winds finally lead to the ripening of the grapes.

Champagne Dom Pérignon Œnothèque 1996 offers an apparent paradox on the palate, in which concentration and movement compete to impose themselves. A wine with a tense and decisive structure, which contains its almost tactile energy for an instant, then lets it vibrate and finally explodes. Its opulence then imposes itself with persistence, incisiveness and persuasiveness. On the nose, the praline quickly combines with lemon and dried figs. Then the most hidden notes emerge, iodised and peaty.

All assemblage ingredients are well mixed and grant the Vintage a stronger intensity, liveliness and precision: Champagne energy at its best! P3 is Troisième Plénitude by Dom Pérignon, the result of a 25-year process of elaboration. The Champagne gains an even more essential structure, enriched by a slow and deep integration. This is a sublime wine, more complex than ever. The Troisième Plénitude is Dom Pérignon's soul.
