In Rilly-la-Montagne, Premier Cru of the Montagne de Reims, Thomas Herbert leads the Maison familial Champagne Herbert & Cosince 2016. Third generation of the family, Thomas guards with dedication a viticultural heritage of 7 hectares, distributed among the Premiers Crus of Rilly, Trois-Puits and Ludes, and the renowned Grands Crus of Mailly and Verzenay.
Since Thomas' arrival, a real revolution has begun in the company based on environmental sustainability: for example, insecticides are not used, preferring the strategy of "sexual confusion" to combat parasites and diseases. Thomas' scrupulous approach and attention to detail also emerges in the practice of targeted pruning, which limits the number of bunches per plant, ensuring maximum quality and optimal ripening of the grapes.
In the cellar, the philosophy is to let the terroir speak: fermentations take place exclusively with indigenous yeasts, maximizing the unique characteristics of the vineyard. The wines then refine for at least 9 months in barrels from Burgundy, followed by a period of at least 3 years of maturation in the bottle on their own yeasts. The result is extraordinary: wines of great structure and complexity, characterized by a seductive charm. Production is extremely limited, with just a few bottles for each of the references, corresponding to approximately one barrique.
