Champagne Parmantier Frère & Souer, a family of winemakers since 1683, is a small treasure of just 10 hectares located between Reims and Epernay, more precisely in the villages of Merfy and Chamery (Premier Cru) in the Montagne De Reims. Celia and Stephane Parmantier, who are currently driving the Domaine, manage the property according to the principles of organic farming combined with strict biodynamic practices (in biodynamic conversion from 2019).
Among the practices adopted in the vineyard, permaculture management consists of planting trees and plants of other horticultural and cereal crops, just as the free grazing of chickens and sheep in the vineyards allows the natural regulation of soil fertilisation and grass growth, without the use of harmful chemicals. Moreover, copper and sulphur are not used in the vineyards. This deep commitment of Domaine Parmantier is the basis of its objective, which is to create a sustainable ecosystem to obtain healthy grapes that are the basis for great results in the winemaking process.
In the cellar, spontaneous fermentation with indigenous yeasts is favoured, any external or mechanical intervention is limited to a minimum (no filtration) and no sulphites are added. The dégorgement is done by hand, "à la volée". Vinification is carried out using single grape varieties for individual plots and strictly " millesimé" in order to bring out the typical features of each terroir and individual years, which translate into notes that surprise the palate when tasting. These are limited edition Champagnes for true enthusiasts.
