Michel Loriot inherited the family estate and started the Domaine in 1977, helped by his partner Martine Pierson. Michel Loriot is called the "mélomane-vigneron" because he managed to link his strong passion for music with his vocation for Champagne, so, several plots of vineyard benefit from a new practice in the Champagne region - named proteody - implying music in the vineyards to stimulate the natural resistance of the vines. Symphonies work in the vineyards... and in the cellar, too!
Michel Loriot signs his productions with a selection of great classics. The greatest composers cradle the wines being aged: Beethoven, Mozart, Brahms, Vivaldi, Elgar participate in the magic of high quality effervescence by bringing vibrations that reach the wine, the yeasts and the proteins that compose it. The vibrations of the music act on the structure and help it to express all its aromas and flavors during its aging period. The harmony of the elements is created... and Michel Loriot can experience the emotion of the music, translated into his Champagne Apollonis.
The property now has about 7 hectares of vineyards in Festigny, a small village located in the Vallée de la Marne and ideal terroir for the cultivation of Meunier,where Michel, helped by his daughter Marie, also cultivates Chardonnay and Pinot Noir to assemble the cuvées. In the vineyard the maximum respect for the environment is the rule, with particular attention to biodiversity: those practices are necessary to obtain healthy grapes and high quality.
