Champagne Augustin
AirChampagne Air by Augustin is the result of the blend of 50% Chardonnay and 50% Pinot Noir from grapes from young vineyards of a single Cru in Avenay Val d'Or in the Vallée de la Marne.The biodynamic viticulture without the use of pesticides and in harmony with the phases of the moon is the foundation of Marc Augustin's production philosophy which sees the air element as the intangible symbol of life, alive and volatile. This is how the correlation between the air and this fine, light and delicate cuvée is born.Product of a single harvest, the principles of biodynamics are also followed in the cellar. The alcoholic fermentation is spontaneous with the use of unfiltered indigenous yeasts and is done in wooden barrels/jars and in terracotta amphorae, with maturation sur lies for 11 months. Long bottle aging for approximately 72 months. Champagne Brut not dosed during disgorgement. The Champagne Air is floral on the nose, fruity with accentuated hints of pastry; the palate is fresh and lively, harmonious and balanced. - Shipping and returns
