The Rosé des Riceys are still rosé wines produced in limited quantities only from Pinot Noir grapes subjected to a semi-carbonic maceration and vinified in whole bunches. This "rare" “Rosé des Riceys” AOC, located in the Aube (Côte des Bar) department, takes its name from the three villages Haut Riceys, Haut-Rive Riceys and Bas Riceys. Production is subject to strict regulations that impose a maximum ceiling that usually does not exceed 70,000 bottles per year and only in favorable years.
Rosé des Riceys are very particular rosé wines, rather concentrated and with an intense aromatic richness. Legend says that this wine was highly appreciated by Louis XIV King of France (1638-1715) and that it was brought to Court for the first time by the Riceys laborers who built the foundations of the Palace of Versailles. Undoubtedly one of the most intriguing rosé wines in France.
