Domaine Olivier Horiot, with a vineyard area of about 8.5 hectares, is located in Côte des Bar, the southernmost area of Champagne, and more precisely in the Ricey Village, where, in addition to the AOC Champagne, two other appellations coexist, namely Côteaux Champenois and Rosé des Riceys. The family-run property has been led for several generations by Olivier Horiot.
Through his own production of Champagne and still wines (Rosé des Riceys and Coteaux Champenois), he has refocused attention to so-called "Cépage Oublies", or forgotten grape varieties (Arbane, Petit Meslier, Pinot Blanc and Pinot Gris), in addition to the classic Pinot Noir, Meunier and Chardonnay. Olivier Horiot has approached the principles of organic and biodynamic agriculture with a focus on the cycles of nature without the use of harmful chemicals; furthermore, in the vineyards ploughing is carried out using horses to minimise environment impact.
Vinification is carried out by "lieu-dit" in order to bring out the differences that each parcel of vineyard translates into notes that surprise the palate during the tasting. The Kimmeridgian soil dominated by limestone and clay give to Olivier Horiot's wines character, finesse and balance and reflect a continuous commitment to quality.
