A simple will pushes the two brothers: to elaborate the parcel cuvées according to meticulous research and to play with the maturity of the grapes, while respecting and remaining faithful to those varieties that are the most traditional of these terroirs: Pinot Blanc, Chardonnay and Pinot Noir. A particular interest is also given to the conservation of biodiversity and landscapes: the area, already classified as "High Environmental Value" in 2013, was then certified "Sustainable Viticulture in Champagne" in September 2014, according to what is the religion of Simon and Marie: "we do not exploit the vine, we live with it".
