The grapes of the clayey soils produce round, fleshy notes, while the vineyards of the sandy soils have a rather straight style. Fermentation and vinification take place in old oak barrels from Chassagne-Montrachet, with little sulphur and malolactic fermentation, no filtration or stabilisation to maintain freshness and creaminess.
