Rosé Douce Folie

The Champagne Rosé Cuvée Douce Folie 2015 by Domaine La Borderie is composed of 100% Pinot Noir from a single plot of old vines over 50 years old located in Merrey sur Arce - in the Côte des Bar - facing south-west. This Rosé vinifies with the whole bunches for 48 hours, before carrying out malolactic fermentation in stainless steel tanks. The aging is in caves for 60 months and the dosage is 5,5 g/l - making it an Extra Brut

Cuvée Douce Folie is a fine and deep Rosé, a different expression of the Pinot Noir of this terroir: a nose of great character with red fruits, raspberries, violets and an almost caramelized finish; mouth of great personality and depth while carrying a marked mineral freshness. Excellent in combination with raw or baked salmon, or even on red meats such as roasted duck breast.

The Domaine La Borderie is a brand new reality, created just 6 years ago - in 2013 - by Simon and Marie Normand. As brother and sister, they decided to take over the family estate that covers 11 hectares, located around Bar sur Seine, in the Côte des Bar, where the Seine and the Arce meet. A simple will pushes the two brothers: to elaborate the parcel cuvées according to meticulous research and to play with the maturity of the grapes, while respecting and remaining faithful to those varieties that are the most traditional of these terroirs: Pinot Blanc, Chardonnay and Pinot Noir. A particular interest is also given to the conservation of biodiversity and landscapes: the area, already classified as "High Environmental Value" in 2013, was then certified "Sustainable Viticulture in Champagne" in September 2014, according to what is the religion of Simon and Marie: "we do not exploit the vine, we live with it". In the vineyard they are constantly looking for limited harvest and a high degree of ripeness of the grapes, which then translates into a high concentration of aromas directly in the cuvées. While in the cellar, the grapes are pressed as soon as they are harvested, always trying to preserve the integrity of the fruit. Each batch of juice is then vinified separately according to its origin, thus allowing the rich palette of aromas and fragrances to expand in order to create assemblages increasingly full of character.
