Champagne Nowack
Fontinette
The Champagne Fontinette by Domaine Nowack is a Blanc de Noirs made from 100% Meunier, originating from the eponymous Lieu-Dit near Vandières, in the Vallée de la Marne. The vineyard, around 50 years old, is rooted in sandy clay-limestone soils with marl presence and is farmed in harmony with natural cycles, using plant-based preparations, gentle soil work, and permanent cover crops, within a living ecosystem that promotes biodiversity and balance.
This edition, from the 2021 and 2022 vintages, is crafted through vinification and fermentation entirely in oak barrels, with a maturation of over 10 months, following an artisanal approach that enhances the terroir. After bottling with a cork closure, it ages on the lees for more than 30 months. The final dosage of 1 g/l, in Extra Brut style, highlights purity and authenticity, shaping a cuvée of intensity and strong personality.
On the palate, Fontinette reveals an elegant and deep profile, with notes of white-fleshed fruits, hints of dried fruit, and delicate spicy nuances. It stands out for its mineral tension, balanced structure, and a long, refined finish that underscores its expressive precision.
