Champagne Mathilde Savoye
Extra Brut Blanc de Meunier
The Champagne Extra Brut Blanc de Meunier by Mathilde Savoye is made from 100% Meunier, harvested from vines of around 35 years located in the lieux-dits "Les Chapelleries" in Cuchery and "La Loge des Vignes" in Baslieux-sous-Châtillon. These plots, in the heart of the Vallée de la Marne, lie on clay-limestone soils that help define the wine's structure and identity.
This edition, harvest 2023, is vinified exclusively in stainless steel to enhance the varietal purity and preserve its aromatic drive. After tirage comes an ageing of 18 months on its own lees, which brings finesse and a modest complexity, while the final dosage of 3 g/l, in an Extra Brut style, reflects an essential approach that gives full voice to the freshness of Meunier and to its most sincere expression.
On the palate, it reveals a fresh and immediate profile, with aromas of white and yellow-fleshed fruits, accompanied by light floral notes. The palate is defined by a good tension and a clear mineral imprint, which enhance its drinkability and overall balance.
