Champagne Aurore & Florian Laval
La Fontaine des FĂ©es 2020
The Champagne La Fontaine des Fées by Aurore & Florian Laval is a Blanc de Noirs that is part of the project titled "Extrait de Terroir", in this case entirely devoted to Meunier, a variety that here finds a deep interpretation rooted in its terroir of origin. The grapes are born in the eponymous lieu-dit near the village of Boursault, on the Rive Gauche of the Vallée de la Marne, where the soils of clay over marl, worked organically, imprint on the wine a marked territorial identity, conveying the essence of a land that the very name of the cuvée celebrates with a poetic and dreamlike accent.
This edition, Vintage 2020, is born from grapes harvested at the peak of ripeness, which give the wine richness and harmony, and is vinified and matured entirely in oak barriques for around 9 months, with a spontaneous malolactic fermentation and without any filtration, relying on a natural cold stabilisation that preserves its authenticity. After tirage comes a long ageing of around 48 months on its own lees, at the end of which the final dosage of 1.12 g/l, in an Extra Brut style, accompanies with great measure a Meunier of depth and balance.
On the palate, La Fontaine des Fées stands out for its broad and enveloping profile, where the generous flesh of Meunier intertwines with hints of ripe fruit and a texture refined by the passage in wood, in a whole of great coherence. The palate is rich and deep, sustained by a lively freshness and a very fine bubble that accompany a long and harmonious development, closing on a savoury and persistent finish that confirms the character and territorial identity of this signature cuvée.
