Champagne Nowack
Cru d'Origine "Ĺ’uilly" 2017
The Champagne Cru d’Origine “Œuilly” by Domaine Nowack is a Blanc de Noirs produced from Meunier grapes grown in the village of Œuilly, on the rive gauche of the Vallée de la Marne, rooted in friable chalk soils. This cuvée belongs to the Cru d’Origine collection, a project through which Flavien Nowack interprets the different villages of Champagne as natural and distinctive expressions of terroir. The exclusive use of grapes from the original vineyard allows for a direct and authentic reading of the territory, without corrective interventions or external additions.
This edition, based on the 2017 harvest, is crafted through an essential and respectful winemaking approach. Spontaneous fermentation with indigenous yeasts is followed by vinification and maturation in fût de chêne, without fining, filtration, or cold stabilization. After tirage, carried out under cork closure, the second fermentation develops thanks to the yeasts naturally present in the grape must. The final dosage of 0.8 g/l, in Extra Brut style, is made with grape must, preserving integrity, energy, and aromatic transparency.
In tasting, Cru d’Origine “Œuilly” expresses a pure and vibrant profile characterized by notes of ripe fruit, floral nuances, and hints of dried fruit. On the palate it reveals incisive freshness, a creamy texture, and pronounced chalky minerality leading into a long, harmonious, and elegant finish.
