Champagne Nowack
Bauchets
The Champagne Bauchets from Domaine Nowack is a Blanc de Noirs crafted from Pinot Noir sourced from the eponymous Lieu-Dit located near Vandières, in the Vallée de la Marne. The vines, around 40 years old, are rooted in calcareous-sandy soils with the presence of marl, a context that lends the wine depth, energy, and a marked territorial identity. Flavien Nowack interprets this parcel as a Lieu-Dit of great character, capable of expressing finesse and substance with remarkable precision.
This edition, from the 2021 harvest, is vinified and fermented entirely in fût de chêne, a choice that brings complexity and structure without weighing down the aromatic profile. After tirage, carried out under cork, the wine ages for more than 40 months on its lees, gaining depth and a broad, well-defined texture. The final dosage of 1.5 g/l, in Extra Brut style, highlights the purest expression of Pinot Noir.
On the palate, Bauchets reveals an intense and profound profile, with notes of ripe red fruits, blackcurrant, and raspberry, accompanied by hints of spice, touches of hazelnut, traces of dried herbs, and a distinctive chalky minerality. The palate shows full structure, supported by well-integrated acidity and an elegant texture that combines volume with vertical drive. The finish is long, precise, and saline, perfectly aligned with the Brut Nature style and the character of the Bauchets vineyard.
