Champagne Nowack
Cru d'Origine "Mancy"
The Champagne Cru d’Origine “Mancy” by Domaine Nowack is a Blanc de Blancs produced from Chardonnay grapes grown in the village of Mancy, in the Coteaux Sud d’Épernay, where the vines are rooted in clay over chalk soils. This cuvée belongs to the Cru d’Origine collection, a project through which Flavien Nowack interprets the different villages of Champagne as authentic expressions of terroir. The exclusive use of grapes from the original vineyard allows the natural character of the site to emerge without external additions or stylistic corrections.
This edition, based on the 2016 harvest, is crafted through an essential and respectful winemaking approach. Spontaneous fermentation with indigenous yeasts is followed by vinification and maturation in fût de chêne, without fining, filtration, or cold stabilization. After tirage, carried out under cork closure, the wine continues a long lees aging of around 8 years, developing depth and aromatic precision. The final dosage of 1 g/l, in Extra Brut style, is made with grape must, preserving integrity and expressive energy.
In tasting, Cru d’Origine “Mancy” reveals a tense and vibrant profile characterized by notes of citrus zest, white flowers, and pronounced chalky minerality. On the palate it shows precision, drive, and a fine texture, supported by incisive freshness and a persistent, elegant, and deeply territorial finish.
