The Champagne Pie Danse by Maxence Janisson is an authentic Blanc de Noirs, made exclusively from Pinot Noir grown in the eponymous lieu-dit on the Coteaux Sud d'Épernay. This first independent cuvée marks the debut of a vigneron who, after his experience in the family Maison, chose a personal path inspired by the Burgundian tradition, favouring a craft-driven and organic approach in full respect of the environment and the raw material. The grapes are born from a mid-slope plot on brown soils and rich, fat clay, which imprint on the wine structure and a marked territorial identity.

This edition, based on the 2021 harvest, involves an initial fermentation in stainless steel followed by a passage in fût de chêne towards the end of the process to enrich its structure, with frequent bâtonnage throughout the year and without any filtration, so as to preserve its authenticity. After tirage comes an ageing of around 24 months on its own lees, at the end of which the final dosage of 1.5 g/l, in an Extra Brut style, accompanies with great measure a wine of rare purity.

On the palate, Pie Danse appears with a bright golden-yellow hue and a generous nose of candied yellow fruit, between apricot and nectarine, followed, after adequate aeration, by elegant notes of dried fruit that enrich its complexity. The palate is rich and enveloping, with a marked expressiveness of stone fruit accompanied by subtle nuances of blackberry and almond, while the generous attack evolves towards great finesse, enhanced by a slight bitter note of orange peel and a pleasant marine salinity that amplify its persistence and elegance. Production is in a limited run of 3,199 bottles and 144 magnums.
