Le Champs de l'Épinette
The Champagne e Champs de l’Épinette by Jérôme Blin is a Blanc de Noirs sourced from a single parcel located in Dormans, in the eponymous lieu-dit, characterized by clay-limestone soils and a western exposure. The vines, with an average age of 30 years, are cultivated following organic and agroforestry methods that foster biodiversity and ecological balance within the vineyard.
The 2019 harvest was vinified in stainless steel, with spontaneous fermentation by native yeasts, without filtration or fining. The wine was aged for at least 24 months on the lees, followed by an Extra Brut dosage, offering a clear interpretation of Pinot Noir in its single-parcel expression, with aromatic precision that enhances the purity of the fruit.
On tasting, Le Champs de l’Épinette reveals a pale straw yellow hue. The nose is intense and penetrating, dominated by spicy notes and a distinctive touch of cinnamon. On the palate, the attack is soft and almost caressing, unfolding into a buttery and indulgent texture that leads to a spicy and surprisingly persistent finish. A cuvée of original character, produced in only 1000 bottles, and a true emblem of artisanal and identity-driven savoir-faire.
