Champagne Doyard
Les Lumières - Tome 2012
The Champagne Les Lumières - Tome 2012 by Doyard is born from an exceptional vintage and represents the pinnacle of the art of blending, in line with the family's vision. The cuvée combines 65% Chardonnay, sourced from the Grand Crus of Avize and Le Mesnil-sur-Oger, with 35% Pinot Noir harvested in Aÿ, another prestigious Grand Cru of the Vallée de la Marne.
The grapes, exclusively from the 2012 harvest, come solely from the first pressing, ensuring purity and elegance. Vinification takes place entirely in Burgundy barrels of at least five previous uses, with spontaneous fermentations and no malolactic fermentation, in order to preserve the wine’s natural tension and varietal identity. After tirage, the wine is aged for over 120 months on the lees, developing rare and structured aromatic depth. The final dosage, under 2 g/l, places it in the Extra Brut category.
On the palate, Les Lumières stands out for its generous structure and vibrant energy, with a dense and refined texture. Notes of dried fruit, fine spices, and pastry blend seamlessly with a chiselled minerality, delivering a profile of remarkable precision and persistence. A cuvée produced only in the greatest vintages, it is a true expression of the artisanal and forward-looking philosophy of Domaine Doyard.
