Coteaux Champenois Doyard
Aÿ Rouge 2020
The Côteaux Champenois Aÿ Rouge by Doyard is the result of meticulous vineyard work and the choice to highlight Pinot Noir in one of its purest expressions. The grapes come from the 2020 harvest and a single Lieu-Dit “Bonottes”, located in the prestigious village of Aÿ, classified as Grand Cru in the Vallée de la Marne, renowned for the finesse and power of its red wines.
Vinification involves fermentation and ageing for around 18 months in oak barrels, which provide structure and depth without overshadowing the freshness of the fruit. Production is extremely limited: only 1,346 bottles and 46 magnums, reflecting the artisanal and selective approach of the Doyard family.
On the palate, Côteaux Champenois Aÿ Rouge reveals an elegant and refined profile, with delicate notes of raspberry, red fruits, and a balsamic touch of mint. The palate shows balance, finesse, and vibrant freshness, supported by a subtle and persistent tannic structure.
