Champagne Doyard
Œil de Perdrix Magnum 2018
The Champagne Œil de Perdrix by Doyard represents one of the most ancient and fascinating expressions of the Champagne tradition. The term “Œil de Perdrix”, meaning “Partridge’s Eye”, dates back to the 18th and 19th centuries, used to describe wines that, due to the impossibility of fully decolorizing red grape musts, revealed an amber hue with pinkish reflections, halfway between a Blanc de Noirs and a Rosé.
The cuvée is composed of 75% Pinot Noir and 25% Chardonnay, sourced exclusively from 100% Grand Cruvineyards. The Pinot Noir undergoes a short direct maceration, giving the wine its distinctive shade and refined vinosity, while the Chardonnay from the Côte des Blancs brings tension and minerality, highlighting precision and finesse. The final dosage is just 3 g/l, in Extra Brut style, underlining freshness and balance.
On the palate, Œil de Perdrix 2018 reveals depth and complexity, with notes of ripe red fruits, pomegranate, and redcurrant, enriched by citrus touches and mineral undertones. The mouthfeel is elegant and structured, with a refined vinosity leading to a long, vibrant finish.
