Champagne Doyard
Vendémiaire
The Champagne Vendémiaire by Doyard is a Blanc de Blancs made from 100% Chardonnay, sourced mainly from old vines with an average age of 40 years located in the Premier Cru of Vertus and the Grand Crus of Avize, Oger, Le Mesnil-sur-Oger and Cramant, in the heart of the Côte des Blancs. An emblematic cuvée, created from the blend of three consecutive vintages, conceived to faithfully reflect the purity, freshness and elegance that define the style of the Domaine.
Vinification combines tradition and precision: 40% ferments and ages in fût de chêne (pièces bourguignonnes of at least five wines), while the remaining 60% is vinified in stainless steel tanks, preserving brilliance and aromatic transparency. Only the moût de cuvée is used, with partial malolactic fermentation (20%), ensuring an authentic and natural balance. The Champagne then matures for at least four years on the lees, developing complexity, depth and finesse. The contained dosage of 4 g/l defines a style of great precision and expressive purity.
On the palate, Vendémiaire reveals a tense and elegant profile, marked by notes of ripe citrus, white-fleshed fruit and fresh flowers, interwoven with nuances of hazelnut, bread crust and chalk. The fine and creamy mousse accompanies a well-balanced structure, sustained by vibrant minerality and a long persistence, leaving a finish of crystalline freshness and absolute precision.
