Fleur de Passion “Récemment Dégorgée” 2008

The Champagne Fleur de Passion by Diebolt-Vallois is the Domaine's Cuvée de Prestige, first created in 1953 by Jacques Diebolt's grandfather and reintroduced in 1992, drawing inspiration from the great cuvées of the historic Maisons. It is a Blanc de Blancs obtained exclusively from a selection of Chardonnay grapes harvested from seven old vines located in the Grand Cru of Cramant, among which the lieu-dit Les Buzons stands out with vines over seventy years old, alongside Fromates, Fourches, Gouttes d'Or, Pimonts, Gros Monts and Rouillées.

This edition, Vintage 2008 Récemment Dégorgée, comes from one of the most celebrated harvests of the century for its extraordinary chalky minerality and vibrant acidity. It is born from vinification and fermentation entirely in oak barrels, without malolactic fermentation, filtration or fining, and after the tirage comes, unlike the "classic" Vintage, a prolonged ageing on the lees of over thirteen years, while the final dosage of 3 g/l, in an Extra Brut style, defines its taut and vertical character.

On tasting, Fleur de Passion 2008 "Récemment Dégorgée" offers on the nose complex aromas of candied citrus, brioche and hazelnut, sustained by an intense freshness that lengthens the finish. On the palate it reveals a crystalline purity and a refined structure, with a vibrant minerality balanced by nuances of ripe fruit, aromatic herbs, white flowers and delicate notes of pastry and sweet spices, while the fine and elegant bubbles bring a harmonious, persistent and enveloping sensation.
