Œil de Perdrix 2019
The Œil de Perdrix 2019 by Doyard is a Champagne of ancient tradition, inspired by a winemaking technique dating back to the 18th and 19th centuries. At that time, the impossibility of fully decolorizing musts from red grapes gave rise to Champagnes with an amber hue and pink reflections. Hence the name “Œil de Perdrix”, or “Eye of Partridge,” which defines a rare style halfway between a Blanc de Noirs and a Rosé.
The cuvée is composed of 75% Pinot Noir and 25% Chardonnay, sourced exclusively from vineyards classified as 100% Grand Cru. The Pinot Noir undergoes a short direct maceration, which imparts the characteristic color nuance and a refined vinous structure. The Chardonnay from the Côte des Blancs adds tension and minerality, enhancing stylistic precision.
On the palate, Œil de Perdrix 2019 reveals a complex and authentic profile, with notes of redcurrant, pomegranate, delicate spices and a chalky mineral finish, balancing depth with freshness.
