Champagne Diebolt-Vallois
Fleur de Passion 2015
The Champagne Fleur de Passion by Diebolt-Vallois is the Domaine's Cuvée de Prestige, first created in 1953 by Jacques Diebolt's grandfather and reintroduced in 1992, drawing inspiration from the great cuvées of the historic Maisons. It is a Blanc de Blancs obtained exclusively from a selection of Chardonnay grapes harvested from seven old vines located in the Grand Cru of Cramant, among which the lieu-dit Les Buzons stands out with vines over seventy years old, alongside Fromates, Fourches, Gouttes d'Or, Pimonts, Gros Monts and Rouillées.
This edition, Vintage 2015, comes from vinification and fermentation entirely in oak barrels, without malolactic fermentation, filtration or fining, so as to preserve the authenticity of the terroir and the integrity of the wine while favouring a pure, precise and refined expression. After the tirage comes a very long ageing on the lees for over 9 years, while the final dosage of 4 g/l, in an Extra Brut style, defines its taut and vertical character.
On tasting, Fleur de Passion 2015 opens on complex aromas of candied citrus, brioche and hazelnut, with hints of aromatic herbs, white flowers and delicate nuances of pastry and sweet spices, sustained by a lively acidic tension. On the palate it reveals great purity and structure, with a vibrant minerality in perfect balance between roundness and freshness, while the fine and elegant bubbles accompany a deep, harmonious finish of remarkable persistence.
