Les Chemin des Plants 2021
The Champagne Les Chemin des Plants by Cazé-Thibaut originates in Châtillon-sur-Marne, on the Rive Droite of the Vallée de la Marne, from a single vineyard (lieu-dit) that gives the cuvée its name. This Blanc de Blancs from Chardonnay grapes precisely reflects a terroir of strong identity, capable of delivering tension, purity, and mineral elegance, offering a clear and terroir-driven expression of Fabien Cazé’s style.
This edition, Vintage 2021, takes shape through vinification and maturation in oak barrels for about 10 months, in line with a handcrafted approach focused on definition and balance. After bottling, the wine ages on its lees for over 42 months, developing complexity and depth while maintaining precision. The final dosage of 1.5 g/l, in Extra Brut style, enhances a profile that is focused, taut, and refined.
In tasting, Les Chemin des Plants 2021 reveals a vibrant and crystalline profile, with notes of fresh citrus, green apple, and white flowers, enriched by hints of chalk and fresh almond. On the palate it is tense and dynamic, driven by marked saline minerality, with precise balance and a long, elegant finish. Production in a limited run of 183 bottles.
