The Champagne Bauchets from Domaine Nowack is a Blanc de Noirs crafted from Pinot Noir sourced from the eponymous Lieu-Dit located near Vandières, in the Vallée de la Marne. The vines, around 40 years old, are rooted in calcareous-sandy soils with the presence of marl, a context that lends the wine depth, energy, and a marked territorial identity. Flavien Nowack interprets this parcel as a Lieu-Dit of great character, capable of expressing finesse and substance with remarkable precision.

The 2020 vintage forms the base year of this edition, vinified entirely in fût de chêne to achieve complexity and structure without weighing down the aromatic profile. After tirage – carried out with a cork closure – the wine continues its ageing with over 40 months on the lees, a prolonged maturation that contributes depth and a broad, well-defined texture. No dosage is added at the time of dégorgement, maintaining the Brut Nature style and enhancing the purest expression of Pinot Noir.

On the palate, Bauchets reveals an intense and profound profile, with notes of ripe red fruits, blackcurrant, and raspberry, accompanied by hints of spice, touches of hazelnut, traces of dried herbs, and a distinctive chalky minerality. The palate shows full structure, supported by well-integrated acidity and an elegant texture that combines volume with vertical drive. The finish is long, precise, and saline, perfectly aligned with the Brut Nature style and the character of the Bauchets vineyard.

Nowack

Founded in 1795 in the village of Vandières, in the Vallée de la Marne, Domaine Nowack has been run since 2011 by Flavien Nowack, who grew up among the family’s vines and trained with experience in Burgundy, including a period in Meursault at Coche-Dury. Today, he is regarded as one of the most interesting voices of the new generation of Champagne vignerons.

His winemaking philosophy focuses on single-parcel vinifications (Lieu-dit), with separate fermentations and maturations to highlight the nuances of each terroir. In the vineyard, he follows an organic approach, with no chaptalisation or malolactic fermentation, and uses indigenous yeasts for the prise de mousse. A distinctive feature is the use of unfermented grape must for the second fermentation, resulting in slightly lower bottle pressure and a marked silky vinosity.

Alongside the Lieu-dit range, Flavien has created the "Cru d’Origine" line, dedicated to exploring individual villages, using both estate-grown fruit and grapes from selected organic growers. The first edition was dedicated to his native village of Vandières. A young talent with a clear vision, Flavien combines technical precision, respect for nature, and a quest for the purest expression of terroir.
