The Champagne Pied Marché by Domaine Doussot-Bourdot is a Blanc de Noirs made from Pinot Noir grapes sourced from a single parcel (lieu-dit) located in the village of Essoyes, in the Côte des Bar. The vines, with an average age of 55 years and a north-west exposure, grow on Kimmeridgian clay-limestone soils, rich in fossiliferous marls, a key element in shaping depth, tension and a distinct mineral imprint. Vineyard work follows sustainable principles, in line with Billy Doussot’s vision, focused on respecting natural balance and enhancing the character of the terroir.

This edition, 2022 harvest, is developed through vinification and fermentation entirely in oak barrels with spontaneous fermentations, followed by a maturation of around 10 months without filtration or fining, in order to preserve integrity and expressive authenticity, while after tirage it undergoes lees ageing that enhances complexity and depth. The absence of final dosage, in Brut Nature style, maintains a pure and direct profile.

On the palate, Pied Marché reveals an intense and vertical profile, with notes of crisp red fruit, ripe citrus and subtle spicy nuances. It is energetic and precise, supported by a well-defined mineral structure and a vibrant freshness that leads into a long, clean and saline finish. Production in a limited run of 1,610 bottles.
