Sonate Sans Soufre Magnum 2012
The Champagne Sonate 2012 by Fleury originates from a project that applies the principles of biodynamics in the cellar as well, with the aim of expressing the utmost purity of the fruit and absolute transparency. Each year, the finest grapes are selected from the most suitable parcels, sourced from vines averaging 35 years of age, cultivated and vinified with meticulous care. This is the fifth edition of a special cuvée crafted with exceptional precision by Jean-Sébastien Fleury.
The 2012 harvest highlights a blend where the power of Pinot Noir (78%) meets the freshness of Chardonnay (22%). Vinification takes place in stainless steel, with malolactic fermentation completed and no added sulfites. After tirage, the wine ages on the lees for at least 10 years, without any final dosage, resulting in an essential, pure, and incisive Extra Brut style.
On tasting, Sonate 2012 shows a bright golden hue and a fine, persistent mousse. The nose reveals a vibrant bouquet dominated by yellow fruits, hints of woodland aromas, and delicate notes of toasted dried fruits. On the palate, it is broad, generous, and distinctive, supported by a balanced energy that leads to a mineral finish of remarkable length.
