Cuvée Théophile Magnum 2005
The Champagne Cuvée Théophile 2005 embodies one of the most intimate and precious expressions of Domaine Gonet-Médeville, dedicated to the firstborn of Xavier Gonet and Pauline Médeville. Produced exclusively in outstanding vintages, it is crafted from a blend of 60% Chardonnay from the Grand Cru of Le Mesnil-sur-Oger and 40% Pinot Noir from the Grand Cru of Ambonnay, sourced from vineyards cultivated with sustainable practices and in full respect of the natural balance of the soil.
The vinification follows an artisanal and non-interventionist approach: spontaneous fermentations in used barriques, with no fining, filtration, or malolactic fermentation. The wine then matures on the lees for over 15 years before dégorgement, with a final dosage of 2 g/l – Extra Brut, intended to enhance the expressive purity of the vintage and the complexity developed over time in bottle.
On the palate, Cuvée Théophile 2005 impresses with the complexity of its aromatic profile, opening with notes of dried fruit, ripe citrus, dark honey, and refined spicy nuances. The mouthfeel is structured and enveloping, supported by an elegant creaminess and a vibrant saline energy that amplifies its gustatory depth. The finish, long and precise, is marked by a striking mineral texture, a hallmark of its evolved and radiant character.
