Cuvée Théophile 2008
The Champagne Cuvée Théophile represents one of the most intimate and rare expressions of Domaine Gonet-Médeville, dedicated to the firstborn of Xavier Gonet and Pauline Médeville. Produced exclusively in outstanding vintages, it is born from the meeting of Chardonnay from the Grand Cru of Le Mesnil-sur-Oger (60%) and Pinot Noir from the Grand Cru of Ambonnay (40%), sourced from vineyards farmed according to sustainable practices and committed to preserving the natural balance of the soils. A cuvée conceived as an expression of depth, rigor, and family memory.
This edition, Millésime 2008, is crafted following an artisanal, non-interventionist approach, with spontaneous fermentations in used barriques, without fining, filtration, or malolactic fermentation. After bottling, the wine undergoes more than 15 years of aging on the lees, a journey that enhances its complexity and integration. No final dosage defines an essential Extra Brut style, designed to highlight the vintage’s pure expression and its evolution over time.
In tasting, Cuvée Théophile 2008 reveals a deep, layered profile, with notes of toasted hazelnut, citrus zest, chestnut honey, and delicate spices. On the palate, the wine shows an ample, creamy texture, supported by pronounced salinity and a constant mineral tension, carrying a solid structure, harmonious progression, and a long, elegant finish.
