Fleur de Passion Magnum 2014

The Champagne Fleur de Passion by Diebolt-Vallois is the Domaine's Cuvée de Prestige, first created in 1953 by Jacques Diebolt's grandfather and reintroduced in 1992, drawing inspiration from the great cuvées of the historic Maisons. It is a Blanc de Blancs obtained exclusively from a selection of Chardonnay grapes harvested from seven old vines located in the Grand Cru of Cramant, among which the lieu-dit Les Buzons stands out with vines over seventy years old, alongside Fromates, Fourches, Gouttes d'Or, Pimonts, Gros Monts and Rouillées.

This edition, Vintage 2014, comes from vinification and fermentation entirely in oak barrels, without malolactic fermentation, filtration or fining, so as to preserve the authenticity of the terroir and the integrity of the wine while favouring a pure, precise and refined expression. After the tirage comes a very long ageing on the lees for over 8 years, while the final dosage of 3 g/l, in an Extra Brut style, defines its taut and vertical character.

On tasting, Fleur de Passion 2014 opens on a refined bouquet of ripe citrus, candied cedro and white flowers, enriched by elegant hints of hazelnut, brioche and a deep chalky trail that reveals the mineral soul of Cramant. On the palate it shows great purity and tension, with a vibrant acidity that sustains a broad, finely chiselled structure, while the salinity intimately interwoven with the freshness leads to a long, vertical finish of extraordinary persistence.

Diebolt-Vallois

Guardians of a knowledge handed down through generations, Jacques Diebolt and Nadia Vallois founded their Domaine in Cramant in 1978, uniting two ancient lineages of vignerons — the Diebolt, tied to this Grand Cru village since the 19th century, and the Vallois, in Cuis since the 15th. In the northern Côte des Blancs, the chosen land of Chardonnay, the family carved evocative cellars into the chalk of the hillside. Today the Domaine is led by their children Arnaud and Isabelle, with the third generation already at work, while Jacques continues to watch over the vines and the blends.

The vineyard stretches across nearly fourteen hectares, predominantly Chardonnay, among the Grands Crus of Cramant, Chouilly and Le Mesnil, the Premier Cru of Cuis and a few plots on the border, with vines in Cramant that are over sixty years old. Farmed with a reasoned approach and grass cover between the rows, the Domaine drives the roots of its vines deep into the chalk to draw out its minerality. From this are born chiselled, vibrant Blanc de Blancs, the fruit of vinifications carried out plot by plot, faithful expressions of the crystalline elegance of the Côte des Blancs.
