The Champagne Prestige by Domaine Diebolt-Vallois captures the most luminous soul of the CĂ´te des Blancs, that stretch of Champagne where Chardonnay finds its most crystalline and vertical expression. Born from the dedication of a family deeply tied to Cramant, this Blanc de Blancs interprets the great Grand Cru chalk terroirs with artisanal elegance, preserving a philosophy built on patience, restraint and respect for the mineral finesse of this gifted land.
This edition, based mainly on the 2021 harvest and completed by 42% from the three previous vintages together with a 12% share of Réserve perpétuelle begun in 2009, comes exclusively from Chardonnay grapes of the Grand Cru villages of Cramant, Chouilly and Le Mesnil-sur-Oger. Vinification and fermentation in steel are followed by a brief passage in wood that refines the selection of the vintages. After the tirage comes an ageing on the lees of at least 36 months, while the final dosage of 4 g/l, in an Extra Brut style, safeguards its purity and mineral tension.
On tasting it reveals a luminous, finely chiselled profile, where ripe citrus, white flowers and delicate notes of pastry and hazelnut intertwine with a chalky base of great clarity and evident finesse. On the palate the mousse is creamy and enveloping, sustained by a vibrant acidity that lends verticality and drive, while the ample, rounded structure carries a long, saline and extraordinarily persistent finish of rare mineral elegance.
