The Champagne Blanc de Blancs by Diebolt-Vallois is an authentic portrait of the Côte des Blancs, where Chardonnay becomes the clear, mineral voice of its pure chalk terroir. Amid the gentle slopes of Cuis and the hills around Épernay, this cuvée is designed to convey with natural ease the freshness and elegance that make the Chardonnay of this prized part of Champagne unmistakable.
This edition, based on the 2022 harvest and completed by 20% from the 2021 vintage, expresses itself through vinification and fermentation in temperature-controlled steel tanks that preserve purity and aromatic definition. After the tirage comes an ageing on the lees of at least 30 months before the dégorgement, while the final dosage of 4 g/l, in an Extra Brut style, safeguards the freshness and tension of the wine.
On tasting, it shows a straw-yellow colour crossed by lively greenish reflections, opening on the nose with great elegance on white flowers, tropical fruit, green apple and a final touch of graphite. On the palate the texture is fine and silky, animated by a bright acidity and juicy flavours of citrus and apple, while the creamy texture carries a floral finish, long and of marked mineral persistence, capable of delivering depth and balance.
