The Champagne Fleur de Passion 2015 by Diebolt-Vallois is a true Cuvée de Prestige, conceived for the first time in 1953 by Jacques Diebolt’s grandfather and reintroduced in 1992, inspired by the great prestige cuvées of the historic Maisons. It is a Blanc de Blancs made exclusively from Chardonnay sourced from seven old parcels of Cramant Grand Cru: among these, the lieu-dit Les Buzons stands out, with vines over 70 years old, together with Fromates, Fourches, Gouttes d'Or, Pimonts, Gros Monts and Rouillées.

The Millésime 2015 is vinified entirely in oak barrels, without undergoing malolactic fermentation, filtration or fining, in order to preserve the authenticity of the terroir and the integrity of the wine. Every practice that could stress the wine is avoided, allowing for a pure, precise and refined expression. After the prise de mousse, it undergoes a very long ageing on the lees for 9 years, while the final dosage is limited to 4 g/l, in Extra Brut style.

In tasting, Fleur de Passion 2015 opens with complex aromas of candied citrus, brioche and hazelnut, supported by a lively acidic tension that leads to a deep and persistent finish. On the palate, it reveals great purity and structure, with a vibrant minerality perfectly balanced between roundness and freshness. Fruity notes emerge, along with hints of aromatic herbs, white flowers and delicate nuances of pastry and sweet spices. The fine and elegant bubbles make the tasting harmonious and remarkably persistent. A sophisticated and profound cuvée that perfectly embodies the Diebolt-Vallois style and the identity of the Grand Cru of Cramant.
