Œil de Perdrix
The Champagne Œil de Perdrix by Dehours originates in the Vallée de la Marne and clearly reflects the vision of Jérôme Dehours, a vigneron who has long championed the role of Meunier as a defining grape of his territory. The name refers to the delicate pale rosé hue known as “œil de perdrix”, obtained not through skin maceration, but through a carefully balanced blend of grapes. The family-owned parcels, planted on clay-limestone soils, contribute to shaping a cuvée of notable finesse, capable of combining energy, precision, and expressive elegance.
This edition, with 2022 as the base vintage, is crafted from a blend of Meunier (82%), Chardonnay (16%), and a small portion of Meunier vinified as red wine (2%). Vinification and fermentation follow a parcel-based approach, with meticulous attention to detail in order to preserve the identity of each plot. After bottling, the wine undergoes at least 24 months of aging on the lees, allowing it to develop complexity and harmony. The final dosage of 1.1 g/l, in Extra Brut style, highlights the cuvée’s taut and precise character.
On the palate, Œil de Perdrix reveals an elegant and luminous profile where freshness, minerality, and a gentle fruity roundness reach refined balance. Notes of white flowers, citrus, and wild strawberries emerge, supported by a fine, silky perlage. The palate is pure, coherent, and vibrant, with a precise texture and a delicate yet persistent finish that extends the sensation of balance and mineral tension.
