Champagne Emeline De Sloovere
75/25
The Champagne 75/25 by Emeline De Sloovere expresses in its very name the understanding between two complementary varieties, combining the generosity of Meunier and the drive of Chardonnay in a sincere portrait of the villages of Monthelon and Mancy, in the Coteaux Sud d’Épernay. Its identity takes shape from vines farmed without herbicides or pesticides, with cover crops and close attention to soil vitality, following a modern, mindful and sustainable vision of Champagne viticulture.
This edition, based on the 2020 harvest and enriched with 30% vin de réserve, shows a clear predominance of Meunier grapes at 75%, completed by 25% Chardonnay, with vinification and spontaneous fermentation driven solely by indigenous yeasts and minimal use of sulphites. After tirage comes ageing on the lees for at least 30 months before dégorgement, while the final dosage of 5 g/l, in the Extra Brut style, fully respects its natural freshness and clear expression.
On tasting, the 75/25 shows a solid, well-defined structure, in which the roundness of the fruit finds balance in lively freshness and a fine, silky mousse, while subtle hints of bread and leavened dough add depth and complexity to the whole. On the palate, the development flows harmoniously and smoothly towards a long, crisp finish, supported by a pleasant savoury vein and a clean, precise persistence of remarkable clarity and genuine appeal.
