La Poirier Notre Dame
The Champagne La Poirier Notre Dame by Rémi Georgeton offers an authentic expression of the Premier Cru of Ludes, in the Montagne de Reims, through a single co-planted parcel (complantée) where multiple grape varieties grow together in the same vineyard. This approach revives a historical practice and allows for a direct expression of the terroir’s complexity, enhancing biodiversity and the natural interaction between the grapes.
This edition is composed of 38% Pinot Noir, 26% Chardonnay, 15% Meunier, along with a significant share of Cépages Oubliés: Arbane (6%), Petit Meslier (6%), Pinot Blanc (5%) and Pinot Gris (5%), which contribute to a more layered and dynamic profile. Vinification and fermentation take place with indigenous yeasts and spontaneous malolactic fermentation, without filtration or fining. After tirage, the wine undergoes at least 18 months on lees, and a dosage of 3 g/l, in Extra Brut style, supports a precise and consistent expression.
On the palate, La Poirier Notre Dame reveals a complex and multi-layered profile, with notes of citrus, white fruit, delicate herbs and mineral nuances. The structure is tense and vibrant, driven by fine bubbles and incisive freshness, leading to a saline and persistent finish that reflects both the richness of the complantation and the low-intervention philosophy. A natural sediment may be present, a sign of the wine’s integrity.
