Initation
The Champagne Initiation by Adrien Salot marks the entry into the expressive world of the young vigneron from the Vallée de la Marne, while already conveying with remarkable precision his vision of artisanal and contemporary Champagne. The grapes come from vineyards located between Bonneil and Chézy-sur-Marne, on soils alternating between clay, limestone and fossil sands that bring energy and depth to the wine. The cuvée sees a prevalence of Meunier grapes with a component of Chardonnay, authentically reflecting the character of the territory.
This edition, with 2019 as the base harvest, comes from vinification and fermentation with indigenous yeasts, combined with a minimal use of sulfur and a deliberately non-interventionist approach, without fining or filtration. After tirage, the wine ages on its lees for around 60 months, developing additional depth while preserving the tension of the fruit. The final dosage of around 3–4 g/l, in Extra Brut style, supports an essential and direct interpretation of Champagne, built on precision of texture and the expression of a single harvest.
In tasting, Initiation reveals aromas of green apple, pear, white flowers and fresh almond, with a mineral component that gradually accompanies the experience. On the palate, it shows a dynamic and linear structure, supported by vibrant freshness, natural balance and a pronounced saline character that extends the finish with precision and clarity.
