Champagne Frédéric Savart
Lieu-Dit "La Moufle" 2021
The Champagne La Moufle by Frédéric Savart tells of a rarity in Champagne, old-vine Meunier grown on chalk, where this variety almost everywhere grows on sandy soils. The single parcel stretches near Les Mesneaux, a Premier Cru village of the Petite Montagne, and it is precisely from the chalky subsoil that it draws that mineral, saline backbone, taut and vibrant, which makes it an authentic and unusual expression of its own terroir.
This edition, Vintage 2021, shows a clear predominance of Meunier grapes, joined by 5% Chardonnay co-planted in the same lieu-dit, and the vinification proceeds with spontaneous fermentations carried out in fût de chêne, where the wine matures before tirage following an artisanal, non-invasive approach. After tirage comes an ageing on the lees of at least 48 months, which lends complexity and elegance without diminishing its tension, while the final dosage of 1.5 g/l, in an Extra Brut style, preserves its surprising purity.
On tasting, La Moufle 2021 reveals itself taut and nervy, with a profile of crystalline purity in which dried pear, ginger, spice and delicate nuances of menthol, sage and dried flowers emerge, the whole cut through by dense veins of saline minerality. On the palate all the elements appear in perfect balance, sustained by a vibrant freshness and a dynamic progression that unfolds with aeration, toward a long, savoury finish of rare precision and expressive elegance. Production in a limited run of 3,182 bottles.
