Champagne Frédéric Savart
L'Ouverture
The Champagne L’Ouverture by Frédéric Savart is a Blanc de Noirs of great elegance, precision, and aromatic depth, made exclusively from Pinot Noir, sourced from Premier Cru vineyards located in the village of Écueil, in the heart of the Montagne de Reims. Although it represents the entry-level cuvée of the Domaine, it already clearly expresses the distinctive style and artisanal philosophy of Frédéric Savart, one of the most acclaimed vignerons in contemporary Champagne.
L’Ouverture is made from a blend of three vintages and stands out for its highly meticulous production method: half of the wine ferments in neutral oak barrels, adding structure and subtle nuances without compromising the fruit’s purity; the other half is aged in stainless steel, to preserve the freshness and vibrancy of the Pinot Noir. Fermentation is spontaneous, and lees aging lasts for at least 24 months, contributing complexity and a silky texture on the palate. The final dosage, in Extra Brut style, is under 4 g/l, highlighting the wine’s mineral tension and flavor precision.
On tasting, L’Ouverture appears bright straw yellow with a fine and persistent mousse. The bouquet is elegant and precise, revealing notes of white-fleshed fruit, citrus, fresh herbs, and a subtle chalky minerality. On the palate, it is tense and vibrant, with a creamy effervescence, an excellent balance between energy and roundness, and a long, savory, and refined finish.
