The Champagne Côte CRM from Domaine Les Monts Fournois originates in the Grand Cru village of Cramant, in the Côte des Blancs, crafted from Chardonnay that precisely interprets one of the region’s most renowned terroirs. The project led by Raphaël and Vincent Bérêche together with Juliette Alips focuses on a rigorous reading of Premier Cru and Grand Cru villages, aiming to create cuvées that clearly and coherently express identity, vintage, and territorial depth.
This edition, Vintage 2017, takes shape through vinification and fermentation designed to preserve maximum expressive clarity, followed by a long ageing process. After tirage, the wine undergoes lees ageing for at least 7 years, a choice that enhances complexity and layered definition. The final dosage, in Extra Brut style, preserves the wine’s essential profile and highlights its natural tension.
On the palate, Côte CRM 2017 reveals elegance and precision, with notes of ripe citrus, white flowers, and chalky nuances. The structure is broad yet dynamic, supported by well-integrated freshness that leads to a long, balanced, and persistent finish.
