Blanc de Noirs "La Montagne"
The Champagne Blanc de Noirs “La Montagne” by Boizel is crafted from an exclusive selection of 100% Pinot Noir, sourced from Premiers and Grands Crus of the Montagne de Reims: the sandy and clay-limestone soils of Cumièresimpart a fruity roundness and lively aromatic expression; the prestigious Grand Cru Mailly, with its chalk and limestone terroir, delivers wines of remarkable structure, depth, and longevity; while Chigny-les-Roses, a Premier Cru village, contributes finesse, freshness, and floral elegance, completing the harmony of the cuvée.
The vinification is carried out with the utmost delicacy and includes the use of 20% reserve wines, ensuring stylistic continuity and expressive depth. After the tirage, the wine ages for at least 36 months on the lees, developing complexity and refinement. The final dosage of 6 g/l is finely balanced to highlight the harmony between fruit, freshness, and structure, a hallmark of the Boizel style.
In tasting, Blanc de Noirs “La Montagne” displays an intense golden hue with amber highlights, animated by a fine and creamy mousse. The nose reveals an aromatic richness weaving together pear, red fruits, apricot, and fragrant brioche. On the palate, it surprises with its balance of fullness and freshness, featuring a silky, refined texture that unfolds into layers of fruit, pastry, and honey. The finish is lively, distinctly fruity, and persistent, confirming its unique personality.
