The Champagne Blanc de Blancs "La Côte" by Boizel is crafted from Chardonnay grapes sourced from a meticulous selection of Grands and Premiers Crus in the Côte des Blancs. Each village contributes its own aromatic identity: Chouilly brings floral elegance, Le Mesnil-sur-Oger adds a striking minerality, Cramant offers finesse and structure, Avize enhances depth and tension, while Vertus provides balance and fruity roundness.
These outstanding Chardonnays, maturing slowly over time, reveal a creamy finesse and complex delicacy, further enhanced by 20% reserve wines that ensure consistency and aromatic depth. Vinification in stainless steel, followed by three years of ageing on the lees and a dosage of 6 g/l, shapes a style defined by purity, harmony, and precision.
On tasting, Blanc de Blancs "La Côte" shows a pale gold hue with green reflections and a fine, persistent effervescence. The bouquet combines floral notes of acacia and hawthorn with richer aromas of brioche, honey, almond, and ripe citrus. On the palate, it stands out for its breadth and smooth texture, displaying a creamy, delicate mouthfeel interwoven with hints of toasted hazelnut, pink grapefruit, and pastry nuances, supported by an elegant and precise minerality.
